Giving in to the Illness

I did it. Having a touch of gastro, then a mild cold, I spent three days over the weekend volunteering at an event assisting with parking. After that I gave in to the illness and spent a day in bed. It did the trick and I was feeling better, though not like blogging or even cooking.

Following that the week passed in a bit of a blur. Now we are into another week and I am feeling more in the pink. Thus I did cook again, just a simple dish as that is all I felt like.

Stewing or chuck steak, thinly sliced pieces about 2 inches across, layered in a casserole dish. Add sliced onion, crushed garlic, herbs as desired, some red wine and a can of crushed tomatoes. Bake for 1 hour and enjoy with your choice of vegetables or rice.

I even managed to do some baking from Mum’s recipe book which I was very pleased with and it went down well at the Lions working bee.

So to anyone else who has been or is ailing, feel better soon.

Tonsils

Well, I will not tell a lie. I have been feeling a little under the weather this week. I have told about my tummy bug, still affecting my appetite, what I also have is a sore throat. I have told you how I dose up on garlic to avoid colds and flu and have increased it this week. There is another secret weapon I have, that is tonsils.

Yes, I still have mine and I credit them with halting these viruses when they take hold. I believe my tonsils stop a head cold from becoming a chest infection. Yes, I have a bit of a sore throat and ear ache and feel the cold more than usual but I am not bedridden with it.

As everyone should know, the best treatment for the flu is to take to your bed for the duration of the aches and pains. Lots of fluids, keep warm and feel free to indulge in drugs that make you feel better. Do NOT go out to work, shop or party as this just spreads it around.

Now, I have taken whisky to make my throat feel better, medicinal purposes only. It has worked too, unlike the cold rainy weather that sent me seeking something that warms me through.

It is interesting though that this morning I was feeling like pizza for dinner, even looking forward to it. Now as that time approaches, I find I don’t have the appetite for it. I think it will be chicken soup and toast again.

I look forward to feeling like my normal self again, though happy to keep the poor appetite, and am sure it will not take long to recover as that is how I am. Thank you Mum too, for breastfeeding.

Gastroenteritis

There is a gastro bug doing the rounds at the moment. I got a mild dose of it and am unsure if it was the door handle at the library, where some staff have been off sick, or if it was the cafe with the cutlery out for people to help themselves.

It is always a risk going places where people gather but I am usually pretty lucky and avoid the ills. So the last couple of days I have been off my tucker and wishing I always felt this way about food, ie. eat because I am hungry, not because I like food.

Anyway, I made a belated call to a family member today and told her I had been feeling queasy. She said I should have called someone if I was unwell so they could help me out. Who wants to hear from someone saying they are sick? That is one of the things to deal with when being single, you have to ask before anyone cares about you.

What I wanted to talk about was dealing with gastro. I did enjoy my chicken soup and toast for dinner last night and dry crackers with cream cheese spread for lunch though technically cheese should be avoided, all dairy and meats should too. Broth, nice and hot, will soothe the stomach while avoiding those other foods will deprive the virus of sustenance thus leading to a quick recovery. Today I had stir fry veggies with lots of onion and garlic, on toast.

 

Flu prevention

I have been finding that all the places I am going lately have been dealing with staff illness. Cold and flu are on the rampage. I have managed to avoid it thus far.

My recommendation is to eat garlic. I know many dislike garlic and some opt for tablets but I find that the real thing works best.

You will have noticed that my recipes usually include garlic, this is because I like it but the benefit of that is that I have an increased resistance to viruses. I believe, and there is plenty of evidence to support it that garlic is a natural antibiotic. This is why I am generally healthy, rarely contracting even a cold.

There has also been a survey recently saying that families with a dog are healthier than those without. My belief is that those families with dogs are less likely to use chemicals in the house such as spray disinfectants. Using chemicals to sterilise your home will reduce everyones resistance to germs and well as increasing exposure to chemicals. I also believe that this increases health problems such as asthma and allergies. As our use of chemicals increases so do these conditions in our children.

It is something worthy of debate at least. Natural antibiotics, soap and water to clean and eucalyptus oil on known contaminated surfaces are the best method for maintaining good health.

So do your own research and good health.

Family and organ recipients

I have become aware of the impact of organ donation on the recipients family. We all know it is a small positive for the donor family in their loss but how it extends widely for the recipient side is really something.

I have posted here about my friend whose brother received a kidney transplant and how she and I felt about it. Since then the impact for the family has become obvious.

The brother (I will call him Dan) is a grandfather, the latest child arriving three weeks after the operation. Dan has gained an extension on watching them grow up. As much as he will appreciate this, his children and their spouses are grateful too.

Dan’s parents have been quite emotional, they were caught unawares when the whole thing occurred and are now hopeful that they might actually out live him. It is a new thing for them but everyone is excited that Dan is no longer tied to the dialysis machine every alternate day.

His three siblings have been a bit quieter about the whole thing. One, who was considering a live kidney donation is relieved it won’t be required. The others are just happy Dan has received a life extension and they are no longer carrying the guilt of not wanting to do a live donation.

Dan is a popular member of the community and many people have been visiting him since the operation, so much so that he is struggling to get the rest he requires to recover from the operation. This has practically chased him from his home in an effort to get some peace and quiet. His sister (my friend) is quite angry about this. “Why can’t people have more consideration?” It is like the morbid who visit hospitals and sit bedside of non relatives for hours, leaving the patient exhausted.

His sister is now wondering how to get all these visitors to show more consideration for all he has been through. He needs to toughen up a bit I think. Tell visitors he has had enough please go, or just don’t answer the door. I have approached doors with signs on them, ‘no visitors today’. Anyone who truly cares will respect this and make an appointment.

In this fast pace life of instant gratification, respect for others is becoming lost as everyone want to get the scoop. It leaves me thinking how I enjoy my privacy. I hope Dan will start to get some peace and quiet soon.

Easy favourite

Not feeling like exerting myself with the cooking tonight so going for a familiar favourite that I can whip up quickly. Spag Bol.

I cook this often so it is easy to put together for me when I don’t feel like working at it.

Finely dice 1 large onion and 1 clove garlic, fry until golden, add 500g mince and stir til well browned. Add 150g tomato paste, 2 cups water, 2 chicken stock cubes, 1 tsp oregano, 1/4 tsp thyme, 1 tsp soy sauce, 1/4 – 1/2 cup red wine.

Simmer over low heat for 1-1 1/2 hours. Serves 5

Usually I serve this over shredded cabbage but tonight I feel like pasta so that is what i am having. It is easy to cook with my Tupperware pasta cooker.

If you are setting up a kitchen, I recommend you go for Tupperware. It is easy to care for, easy to use, covers all your cooking needs and has a lifetime guarantee. My kitchen cupboards would be much more organised if the current stock was available when I started setting up my kitchen.

comfort food

Today I got to ask Mum about why my baking didn’t work. It seem I used the wrong tin. What the recipe calls a cake is actually a slice and should have been in a slice tin rather than a loaf tin.

This is what I need to learn about Mum’s recipes. She keeps them in a black book that she has had as long as she had been married and it is written by her. I now have to learn the tricks of her abbreviations and this is one of them. Another is what she means by milk in her scone recipe. I actually measured as I made them yesterday and got a rough amount so at least now I know if I have enough milk to make them.

The slice that I made is a favourite of Mum’s, she makes it all the time and is easy to make now that I know the rules. It is mixed in a saucepan, I used a non stick one and it just slid out into the tin….easy.

So, melt 4oz butter, 4 oz sugar and 1dsp golden syrup in saucepan, let cool. Add 1 beaten egg then 4 oz SR flour, 2 oz plain flour, pinch salt and 1 cup sultanas. Put in slice tin 11″x5″ sprinkle with cherry pieces and almond slivers. Bake in mod oven 30 mins.

I also want to report success. Having not been able to fit in my jeans last week, I went back to my staple regime and was good for the week and now easily fit my jeans again. It really works.
