Cooking for one

This seems to be a positive one, I have been asked for more.

There is nothing special about what I do. Some of my favorite recipes are bolognese and chilli con carne. The difference in my recipe is that instead of rice or pasta, I use vegetables. Sliced cabbage makes good substitute spaghetti, add some zucchini, cauliflower, capsicum and you have a tasty spag bol. I dish this up into freezer bowls rather than plates (except the one for tonight) and there you are, five healthy meals ready to go.

Stir fries work well too. If you feel it is not enough food then add more vegetables that you like.

Spag Bol.

500g lean mince, 1 clove garlic, 1 med onion, 1 tub tomato paste, 2 chicken stock cubes, soy sauce, oregano, thyme, water, red wine.

Heat some coconut oil in a saucepan. Cook diced onion & garlic til soft. Add mince and brown. Drain off excess oil. Add tomato paste, 1 cup water, stock (no you don’t have to crumble it) soy to taste, tsp oregano, 1/2 tsp thyme, 1/2 cup wine. Simmer uncovered for at least 1 hour, if drying out, add more water. It is done when thick, dark and shiny. Serve over steamed vegetables. One serve on a plate, the rest into freezer containers. These can be frozen for several weeks.

If you want to cook every day for one week, to have variety then by putting 4 serves into the freezer each time you will have a months worth in the freezer. I don’t have the containers to do that and prefer to cook once or twice each week. I don’t mind eating the same thing for a few meals as I only cook my favourites anyway.

    I love the idea of mixture of vegetables for food. I have tried many vegetable recipes but this one is great. I wanna try this one for change. I am hoping to read more interesting post from you again. Thanks.
